I came across White Chicken Chili on Pinterest and had been on my chef list for a long time. And now the time has finally come! After all, it’s disgustingly cold outside and what fits better in the plate or bowl than a hot, spicy and therefore warming chili from the inside?
Now it was time for a white chili. A lean chili because it’s made with chicken. It’s hot but hot in a good way, so very light and warming just like a chili should be. It tastes fresh and kind of like a vacation. This is probably due to the Tex-Mex ingredients and the lime. It is pure soul food, makes you full and happy, but still not a difficult dish. It basically tastes like a burrito just as a soup. Mega yummy!
How To Make White Chicken Chili
The first thing you’ll need to do is dice up one pound of boneless skinless chicken breasts. Then get 3 tablespoons of olive oil heating in a large pot over medium high heat.
Then we’ll add in our diced chicken and get that cooking. We’re going to let this cook for about 5 minutes until the chicken is browned off. Now it doesn’t need to be cooked through yet because we’re going to add in some veggies starting with1 white diced onion4 ribs of diced celery and 1 diced bell pepper, so this is actually considered the holy trinity of cajun and creole cuisineIt has a ton of flavor.
We’re going to cook this for 5 to 7 minutes, until the veggies are softened and the chicken should almost be cooked through at that point. Then we’ll add in 4 cloves of minced garlic2 teaspoons of ground cumin1/2 teaspoon of chili powder, you don’t want too much otherwise it will color the sauce and then just a pinch, about 1/4 teaspoon at most, of cayenne pepper. We’ll cook this for about 90 seconds. Then we’ll add in 2 cans of diced green chiles.
Three 15 ounce cans of drained cannellini beans or you can use great northern beans. You just want white beans1 cup of frozen corn or you can used canned and last, 4 cups of chicken broth and I like to use low sodium so I can control the seasoning. Give this a stir and we’re going to bring this to a simmer and let it simmer for about 10 minutes
Now after 10 minutes, turn off the heat, and we’re going tostir in 8 ounces of cubed cream cheese until it’s melted. This will help thicken up our chili and give it a nice creamy texture. Just before serving I like to sprinkle in 1/4 cup of freshly chopped cilantro and then we are ready to eat!

White Chicken Chili
- 3 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts cubed
- 1 medium white onion diced
- 4 ribs celery diced
- 1 medium green bell pepper diced
- 4 garlic cloves minced
- 2 teaspoons ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 4 cups chicken broth
- 3 (15 ounce) cans white cannellini beans drained
- 1 cup frozen corn
- 1 (4.5 ounce) cans green chiles
- 8 ounces cream cheese cubed
- 1/4 cup freshly chopped cilantro
- sliced jalapeno
- diced avocado
- shredded cheese
- sour cream
- lime Juice
Pour olive oil into a large pot over medium high heat. Add in chicken and cook until browned, about 5 minutes.
Add in onion, celery, and bell pepper and saute 5 to 7 minutes, until soft.
Stir in garlic, cumin, chili powder, and cayenne pepper. Cook 1 minute.
Pour in chicken broth, white beans, corn, and green chilis and bring to a simmer. Simmer 10 minutes.
Stir in cream cheese until melted. Stir in cilantro and serve hot, plain, or with desired toppings.
